Bun bowls are one of our favorite dishes at Vietnamese restaurants, but we had never tried making one ourselves. The recipe was easy and delicious (especially with a squirt of sriracha). You can easily substitute or add other vegetables (ours included some shredded kale).<\/p>\n<hr \/>\n<p><strong>Salad:<a href=\"https:\/\/i0.wp.com\/stoccoroy.com\/blog\/wp-content\/uploads\/2019\/08\/vietnamese-rice-noodle-salad.jpg?ssl=1\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-6301\" src=\"https:\/\/i0.wp.com\/stoccoroy.com\/blog\/wp-content\/uploads\/2019\/08\/vietnamese-rice-noodle-salad.jpg?resize=300%2C200&#038;ssl=1\" alt=\"\" width=\"300\" height=\"200\" srcset=\"https:\/\/i0.wp.com\/stoccoroy.com\/blog\/wp-content\/uploads\/2019\/08\/vietnamese-rice-noodle-salad.jpg?resize=300%2C200&amp;ssl=1 300w, https:\/\/i0.wp.com\/stoccoroy.com\/blog\/wp-content\/uploads\/2019\/08\/vietnamese-rice-noodle-salad.jpg?resize=768%2C512&amp;ssl=1 768w, https:\/\/i0.wp.com\/stoccoroy.com\/blog\/wp-content\/uploads\/2019\/08\/vietnamese-rice-noodle-salad.jpg?w=1008&amp;ssl=1 1008w, https:\/\/i0.wp.com\/stoccoroy.com\/blog\/wp-content\/uploads\/2019\/08\/vietnamese-rice-noodle-salad.jpg?w=948&amp;ssl=1 948w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/strong><\/p>\n<ul>\n<li>8 ounces thin rice noodles (roughly the width of linguine)<\/li>\n<li>1 \u00c2\u00bd cups cabbage, thinly sliced<\/li>\n<li>2\u00e2\u20ac\u201c3 medium carrots, shredded or cut into matchsticks<\/li>\n<li>1 large or 2\u00e2\u20ac\u201c3 medium cucumbers, halved, seeded, and thinly sliced<\/li>\n<li>1 cup chopped fresh herbs, preferably a combination of basil, cilantro, and mint<\/li>\n<li>16 ounces cooked tofu, chicken, or shrimp, cut or torn into bite-sized pieces<\/li>\n<li>1 cup roasted, salted peanuts or toasted almonds, coarsely chopped<\/li>\n<\/ul>\n<p><strong>Dressing:<\/strong><\/p>\n<ul>\n<li>\n<div>\u00e2\u2026\u201c cup fish sauce<\/div>\n<\/li>\n<li>\n<div>\u00e2\u2026\u201c cup freshly squeezed lime juice<\/div>\n<\/li>\n<li>\n<div>\u00c2\u00bc cup light brown sugar, plus more to taste<\/div>\n<\/li>\n<li>\n<div>2 medium cloves garlic, minced<\/div>\n<\/li>\n<li>\n<div>\u00c2\u00bd to 1 fresh jalape\u00c3\u00b1o, minced<\/div>\n<\/li>\n<\/ul>\n<ol>\n<li>To prepare the dressing, combine the fish sauce, lime juice, brown sugar, garlic, and the jalape\u00c3\u00b1o. Whisk well. Set aside. (Note: The dressing will store in the refrigerator for 3 days to a week.)<\/li>\n<li>Bring a large pot of water to a boil. Add the rice noodles, and cook for 4 to 5 minutes (or according to package instructions), until tender but not mushy. Immediately drain the noodles into a colander, and rinse them well with cold water to cool them. Shake the colander to drain away excess water.<\/li>\n<li>When the noodles are well-drained, put them in a large bowl along with the vegetables, herbs and tofu or meat.
