Our Haphazard Garden

While some thought did go into planning our garden this summer, the result has been a splendidly haphazard garden. We planned what we were growing and started everything from seed in the spring, but by the time we were ready to plant in the ground, Maggie had been born and stuff just needed to go in. We borrowed our neighbor’s rototiller to incorporate our backyard compost and got our seedlings in the ground. By the time we had it all in, we realized we had more space than we had planned for and made a mental note that next year we could go bigger. As time went on, we got some surprises: lots of “volunteers” started sprouting up all over the place as many tomato plants and vines took over the unclaimed real estate! We’ve been delighted as we discover what’s coming up and have been watching all kinds of expected and unexpected plants grow. The produce has been delicious, and what’s even better is that Griffin is excited to be part of it all. I’d call that success!

We’ve already made one batch of pesto. Griffin just loves picking the leaves and smelling them.

We can’t wait for this honeydew to be ripe! We smell it every day in hopes it will be ready.
We get a couple handfuls of cherry tomatoes daily, as well as several sweet, crunchy Persian cucumbers.

Strawberry Shortcake

Made this for the first time this morning and it was a big hit for the whole family. I cobbled the recipe together from a few sources, so I thought I would write it up to make it easier to repeat. Note that the shortcake is biscuit-like (i.e., super-delicious), rather than cake-like. If you prefer sponge-cake style, move along.

Strawberries
1 ½ lbs strawberries, quartered
2-3 tbsp sugar

Whipped Cream
1 c heavy cream
2 tbsp sugar
½ tsp vanilla

Shortcake
2 c flour
2 tbsp sugar
1 tbsp baking powder
½ tsp salt
6 tbsp butter, cold, unsalted
1 beaten egg
2/3 c milk

Preheat oven to 425°.

Slice the strawberries and mix with sugar (2-3 tbsp depending on your preferences and the sweetness of the berries). Set aside for at least 30 minutes. The strawberries will shed liquid which makes the sugar properly syrupy.

Whip cream with sugar and vanilla until soft peaks form. Set aside.

For the shortcake, thoroughly mix flour, sugar, baking powder and salt. Cut in butter (I like to pulse it a few times in the food processor) until mixture is crumbly with pea-sized chunks of butter. (The amount of butter in this step is variable depending how buttery you want your shortcake to be.) Combine beaten egg and milk; add all at once to the dry ingredients and mix just until moist. Drop large, rough spoonfuls of dough onto a greased baking sheet. Makes 6-8 shortcakes. (Optional: Before baking, brush a bit of melted butter over the dough and sprinkle with a bit of sugar.) Bake for 12-16 minutes until tops are golden.

Cool for a few minutes. Slice shortcakes in half and spoon berries and whipped cream between layers and over the top. Yum.

Minnesota State Fair

We headed to the great Minnesota get-together, otherwise known as the State Fair, on Sunday! Getting there bright and early at 9am was the way to go as we beat the massive crowds by a few hours and eased into our day of looking at and eating all that Minnesota has to offer.  We certainly saw a lot. Some highlights included the Princess Kay of the Milky Way butter sculptures, the birthing barn, seed art, and of course, the food. Foods tried: mini-donuts, deep-fried cheese curds, pronto pup, Twisted Sister, chocolate malt, jalapeno poppers, salted nut roll, Haralson apple, minty lemonade, chicken gyro, and shrimp on a stick. You know, your typical Weight Watchers day. Griffin was a total champ (he even napped in the stroller) and made our trip all-the-more enjoyable. We’re definitely looking forward to next year!

MILK!!

Griffin took an early, three hour long nap today and so was getting irritable earlier than usual in the evening. He was signing for milk (which is part of our bedtime routine), but I wanted to try to keep him engaged a little longer since 5:30 would likely get us a very early wake up tomorrow. So I told him he could have milk a little later and “wouldn’t you rather play with the lincoln logs?” That worked for about a minute before he led me to the kitchen, pointed at the refrigerator and signed “milk” again. I repeated that he’d have to wait and tried to distract him with some books in the other room. He quickly lost interest in those, padded off to the kitchen and returned, laboriously lugging an unopened container of soy milk from the lower cabinet with this look on his face like, “PEOPLE! Knock it off and pay attention to me: I am trying to tell you, I want MILK!” I could not believe his tenacity and willingness to work with my apparent inability to understand his very simple request. His efforts did not go unnoticed and I quickly poured him a bottle of soy milk. We sat down in the chair and he happily listened to several stories before going to bed at his normal hour. It is seriously such a delight to watch this little toddler discover how to navigate and communicate his way through his world.

Today I made banana walnut muffins with Griffin, and it was truly a transformative experience. This may seem like the beginning of a silly anecdote, but I am totally serious. It really opened my eyes to the fact that my child is ready for things I didn’t know he was capable of.

The idea of involving him in making muffins (which I was going to do regardless) transpired after reading a book called Sign With Your Baby and watching the corresponding DVD. I’ve been working on signing with Griffin since returning from full time work, and already he’s picked up more, milk, and all done. I wanted a little more guidance, though, and so turned to these resources. The babies in the video were communicating on such a sophisticated level that it motivated me to first, learn more signs so I can introduce them to Griffin, and second, really involve Griffin in everyday experiences so we can have more opportunities to communicate and experience things together. Muffin making this afternoon seemed like the perfect chance to start. I thought at the very least he’d be fascinated by the mixer!

I put him in a little apron and pulled the step stool up to the counter. He watched me measure the flour, sugar, and other dry ingredients and put them into the mixer. He listened to my warnings not to put his hands near the moving parts, and was indeed taken with the sound and movement. Next, we worked on the wet ingredients, which were set aside next to another bowl. This is where the magic started happening. I was standing behind him while he was standing on the step stool: I cracked the eggs in front of his face, which elicited an excited, “ooooooooh!” I brought out the egg beater, and we spun it together, hand over hand, to beat the eggs. He giggled. He poured in the milk and yogurt without spilling! We stirred it together with a wooden spoon. I showed him how to mash the bananas with his hand and put them in the bowl, and to my amazement, he did it unaided. This was by far his favorite part. He was laughing with every squish and signed more! when he was done. I crushed the walnuts, and he dutifully put the walnuts in the batter, one by one, after I’d combined the wet and dry ingredients.

He did get banned from actually filling the muffin tins since he wanted to stick his hand in every single one, but this is only the first of many collaborative cooking efforts; I’m sure we’ll get to a point where he will be able to help every step of the way.

Messy

Griffin has eight teeth already. Since he started teething at three and a half months, we definitely have our fair share of things for him to chew on. I’ve been reluctant to give him teething biscuits because of the concern that he might bite off a piece and choke on it. But lately as he’s been working on tooth number eight, he has been gnawing and biting things he shouldn’t. Namely me. That kid can chomp! My shoulder and arms have been receiving the brunt of it, and it seems like his desire to bite is increasing. More teeth on the way?

With a little reluctance, I picked up some very healthy looking teething biscuits at the store today. I took one out of the package and clunked it on the counter. Definitely hard as a rock. With Griffin sitting in his high chair, I handed it over. He immediately liked it and started gnawing away. He attacked it with gusto, and since he was such a mess and seemed to be enjoying eating, I decided to feed him some some squash and yogurt, too. Definitely the messiest feeding to date!

Pickle Love

Much to our surprise, Griffin loves pickles. Andrew gave him a taste one night expecting to get a very dissatisfied (and very funny) face, but to the contrary, he started heartily gnawing away on it. Thus far, he really only sucks and nibbles on them without actually eating them (any time he gets a chunk, he spits it out), but I’d say overall they’re a hit.

Love At First Bite

We have crossed over into solid food, folks! Griffin is in love with bananas. He also ate some rice cereal today, but banana was the clear winner. I’ve been wanting to officially introduce him to real food, and today just happened to be the day. With six teeth already, I’m sure Great-Grandma Doris would say, “It’s about time!”
